Why is blogging so hard to do?

Why IS IT so hard for me to blog? Probably because I have 100 other things on my to-do list. I love to read blogs and I always want to share thoughts and idea and have an outlet, so I just need to utilize this space more often. Today I'm blogging about FOOD, what else of course? One of my favorite things to read about and do! I love, love, love a crock pot recipe, especially this time of year. I feel like anything out of the crock pot is so comforting. This is one of my favorite recipes because it delicious and SO easy, literally 4 ingredients.


CROCK POT ITALIAN CHICKEN

Ingredients
1 can cream of chicken soup (healthy request  preferred)
1 8 oz. block of cream cheese or Neufchatel
1 packet of Italian dressing seasoning mix
1 pound of boneless skinless chicken breast/tenders


Instructions
Combine all 4 ingredients together in crock pot
Cook on low for 6-7 hours or high for 3-4 hours (stirring occasionally), making sure chicken is fully cooked
I like to use half of the packet of the Italian seasoning and use Ms. Dash Italian in place of the remainder, this cuts back on the sodium tremendously.

Serve over pasta or rice and top with parmesan cheese and garnish with parsley.



So good and most importantly SO EASY!! Enjoy!

Spring baking

One of my favorite things about a change in the season is new recipes and baking ideas. I love to incorporate whatever season it is into what I'm cooking. Now that I'm a mom, I especially love "creating" food that not only tastes like the season but also looks like it as well. Harrison can't appreciate bunny pancakes just yet but next year I think he will LOVE it.

As often as I make pancakes, I like to keep my baking mix where I can easily scoop it out. 



I'm also dying to try these lemon rolls! The lemon version of a cinnamon roll, YES please! I also love the look of these mini pancake stacks. What are your favorite spring snacks?

Egg Hunting and Easter

I hope everyone had a wonderful Easter weekend. We had a great weekend except for the rainy, cold weather all day Easter Sunday. Saturday was beautiful and we enjoyed an egg hunt put on by our church. Harrison had more fun that I thought he would. I figured he would be too young but he loved picking up the eggs. It was so much fun to play the Easter Bunny and get our little guy all dressed up in his Sunday best.

He is the happiest little guy! I could seriously EAT.HIM.UP.







 I was so bummed that we didn't get to take any pictures outside on Easter, indoor photos always have the darkest lighting no matter where stand.

Our Renovation Progress

We decided to add on a master bathroom and closet to one of our guest rooms early last year. After several months of waiting our contractor was finally ready to start. Fast forward 5 months and we are STILL. NOT. DONE. I am SO ready to wrap this project up. Living in a renovation for 5 months has been torture. Sheetrock dust is a real B to clean up, especially for 6 weeks. Anyway we have made major progress and we will hopefully be done in the next month or so. Here's a peak of some of the products we used and a look at whats been done.


I'll do a full product review once I have actually put everything to good use. I have been SO pleased with the look of everything so far. The tub and vanity exceeded my expectations.

We are waiting for the doors to be hung so the tile guy can come finish the tile and grout everything. After that we will have the closet shelving done and hopefully pass our final inspection. THEN I will will have some major work to do sorting and getting rid of clothes and shoes that I haven't worn in over a year. This whole process has been a major pain but I'm certain it will all be worth it in the end (or at least it better be). Have a WONDERFUL Easter weekend.

Easter Basket Fun

Happy hump day and Easter week to you all. I am so excited to play Easter Bunny this year to my sweet Harrison. Not that he has a clue what Easter is but he will surely be excited to play with all of the goodies I have put in his basket. Don't get me wrong, it has been fun playing Bunny to my husband and dog but I have officially stepped up my game. Here is a little sneak peak into my sweet baby's Easter basket this year.



Obviously, the swing will not be in the Easter basket but beside it. He loves to swing so much so I thought Easter would be the perfect spring holiday to give this to him. I can't wait to make more memories with our next "first" holiday.

Christmas 2015

I hope you had a wonderful Christmas. We certainly did with our little one. He obviously doesn't know what Christmas is yet but it was so fun to play Santa and start new family traditions with our sweet boy. I know every holiday from here forward will only be more fun. I had to work a half a day at the hospital on Christmas eve so when I got off I went straight to my sisters house where everyone was waiting for me. We ate and exchanged family gifts and then went home to set out our cookies and milk for Santa! Christmas was SO warm where we live, I'm talking 80 degree temps on Christmas day. It never really felt like Christmas so I feel like that made the time pass by even quicker, which is totally sad. I can't wait for all of the upcoming holidays in 2016 with Harrison. I hope when he is older he knows how hard I try to make sure every day is special and every holiday is magical! Here's what our Christmas looked like..

I'm back... for now

Happy hump day everyone! I have not had a second to wrist a post in so long, it's ridiculous. A big shout out to those bloggers who keep up with a blog post everyday, I have NO idea how you do it. Life has been crazier than usual lately. I went back to work last week, after being home with my little love bug for 12 weeks. And it sucked, majorly. I miss him so much during the day. I am so blessed that my moms keeps him so I know he is in great hands, but I so miss watching him all day. Still hoping to win the lottery one day. Harrison has grown so much! I feel like he grows during the day while I'm at work. He loves to "talk" to me and a refuses to lay back without doing his ab crunches, trying to sit up. He always has THE biggest smile in the morning when I look into his bassinet, it seriously melts my heart! He is the greatest thing in the world. On a completely unrelated note, we are EXPANDING. Not our family (woah, talk about too soon) but adding on a master closet and bathroom. I am SO excited! We currently have one bathroom and let me tell you, it can't be good for a marriage to share ONE bathroom. Here are a few of the ideas I'm using to design everything:






I love all of the white and neutral colors, so calm and relaxing. I am so excited to actually start seeing everything come together. The Foundation is done and the plumbing started today. I will start taking pictures as soon as there is something interesting to photograph. Hope you all have a wonderful week.
